These dishes are delicious, healthy, and perfect for sharing at a 4th of July picnic or any summer gathering for that matter.


Caprese Skewers: Fresh Tomato, Mozzarella, and Basil Skewers with Balsamic Glaze


Ingredients:

Cherry tomatoes

Fresh mozzarella balls

Fresh basil leaves

Balsamic glaze

Wooden skewers

Instructions:

Thread a cherry tomato, fresh mozzarella ball, and a basil leaf onto a skewer. Repeat with the remaining ingredients. Arrange the skewers on a platter and drizzle with balsamic glaze just before serving.



Veggie Pinwheels: Colorful Veggie Hummus Roll-Ups


Ingredients:

Whole wheat tortillas

Hummus

Assorted sliced vegetables (such as bell peppers, carrots, cucumbers)

Spinach leaves


Instructions: Spread a thin layer of hummus over a whole wheat tortilla. Layer the sliced vegetables and spinach leaves on top of the hummus. Roll up the tortilla tightly. Repeat with the remaining ingredients. Cut the rolled tortillas into bite-sized pinwheels and secure with toothpicks.




Greek Pasta Salad: Mediterranean Whole Wheat Pasta Salad


Ingredients:

Whole wheat or gluten-free pasta

Cherry tomatoes, halved

Cucumber, diced

Kalamata olives, pitted and halved

Red onion, thinly sliced

Feta cheese, crumbled

Fresh parsley, chopped

Lemon juice

Extra virgin olive oil

Salt and pepper to taste


Instructions: Cook the pasta according to package instructions, then drain and let it cool. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, Kalamata olives, red onion, feta cheese, and fresh parsley. In a separate small bowl, whisk together lemon juice, olive oil, salt, and pepper to make the dressing. Pour the dressing over the pasta mixture and toss gently to combine. Adjust seasoning if needed. Serve chilled.



Watermelon, Cucumber, and Feta Salad

Ingredients:

Watermelon, cut into cubes

Cucumber, peeled and diced

Feta cheese, crumbled

Fresh mint leaves, chopped

Lime juice

Honey (optional)


Instructions: In a large bowl, combine watermelon cubes, diced cucumber, crumbled feta cheese, and chopped mint leaves. Drizzle with lime juice and honey (optional) for a touch of sweetness. Toss gently to combine. Serve chilled.



Grilled Shrimp Skewers: Garlic-Lemon Grilled Shrimp Skewers


Ingredients:

Shrimp, peeled and deveined

Olive oil

Garlic, minced

Lemon juice

Paprika

Salt and pepper to taste

Wooden skewers, soaked in water


Instructions: In a bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and pepper. Add the shrimp to the marinade and let them marinate for about 20 minutes. Preheat the grill to medium-high heat. Thread the marinated shrimp onto the soaked wooden skewers. Grill the shrimp skewers for about 2-3 minutes per side until cooked through and lightly charred. Serve hot with a squeeze of fresh lemon juice.
