Garlic smashed potatoes
Ingredients 8 medium potatoes, washed and cut into 1 inch cubes 2 tablespoons ghee or olive oil 3 cloves garlic minced ¼-1/2 cup vegetable stock 4 stalks garlic chives, finely chopped
Instructions Place potatoes in a stock pot cover with water and boil until tender. Meanwhile, saute’ garlic in ghee or olive oil until the garlic barely begins to brown.
Drain water from potatoes. Add vegetable stock, garlic and ghee. Smash. Stir in chives.
Ingredients 1 pint mushrooms, sliced 1 tablespoon miso 1 tablespoon soy sauce 2 tablespoons ghee or grapeseed oil 2 tablespoons all purpose flour or 1 tablespoon corn starch 1 pint vegetable broth Salt and pepper to taste.
Instructions Saute mushrooms in ghee or oil until mushroom soften Stir in miso Stir in flour if using. Let flour cook until bubbly but not brown Add vegetable broth a little at a time stirring constantly to allow flour to absorb the liquid. Continue adding vegetable broth until you reach the desired consistency. Add soy sauce and stir.
If using corn starch, stir cornstarch into vegetable broth until thoroughly combined. Then add to mushroom mixture and allow to boil and thicken. Add soy sauce.
