Excellent for a quick energy boost
3/4 cup natural, unsalted creamy peanut butter*
1/4 cup pure maple syrup
3/4 cup unsweetened coconut shreds or flakes
3/4 cup gluten free rolled oats
1/4 cup ground flaxseed
1/4 cup finely chopped peanuts or desired add-ins (chocolate chips, raisins, etc.)
Blend together the wet ingredients until smooth. Add dry ingredients and stir until the mixture forms a ball.
Rolling into 2 inch balls. Roll balls in coconut flakes to coat. Can be stored in the refridgerator for up to a week.
