Cauliflower Alfredo Sauce

My dear friend Murali shared this with me at lunch yesterday. His version has no fat added. Certainly, water can be used in place of the oil.

I used a whole head of cauliflower which made a ton. Feel free to adjust the amount of ingredients you use based on the amount of cauliflower you start with.

1 head cauliflower

1 sweet onion

2 cups mushrooms (optional)

1/2 cup white wine

1 T oil

3 T nutritional yeast

1 T dijon mustard (optional)

1 t thyme

1/4 t nutmeg

salt and pepper

Steam cauliflower until tender. Add to blender and blend with enough water until smooth. Saute onions in oil (or water) until slightly carmelized. Add mushrooms and saute until tender. Add white wine and thyme. Reduce until most of the liquid is gone.

Add vegetable mixture to blender with remaining ingredients. Blend until smooth.

Use on pasta, grains or anywhere you would use an alfredo sauce.
