Savory Quinoa

2 cups quinoa

4 cups water

1 tbls ghee

4-6 cloves garlic, minced

3" piece ginger, minced

1 chopped onion

1 chopped carrot

1 cup chopped red and yellow peppers

1/2 cup green peas

1 tsp salt

1 lemon juice

1/2 cup cilantro

1 avocado, cubed

In a large sauce pan heat ghee. Add onion and saute until slightly caramelized. Add remaining vegetables and saute to 1-2 minutes more. Deglaze with lemon juice. Add quinoa and water. Simmer until tender. Add avocado and cilantro before serving.
