Great source of protein, fiber, omega 3 and so much more. It’s a great make-and-take for hikes, picnics or a snack on the go.
¼ cup hemp seeds
½ cup almonds or sunflower seeds
¼ cup shredded coconut
¼ cup pitted medjool dates (4-5 dates)
¼ cup dried apricots (about 6)
1/8 teaspoon cardamom powder
In a food processor grind hemp, almonds and/or sunflower seeds. Add remainder of ingredients until combined and forms a ball. Press mixture into a shallow 8x8 inch baking dish or square lidded storage container. Refrigerate until hard. Cut into 6 squares to serve.
